The Best Chicken Salad Ever
This chicken salad is perfect to enjoy for a lunch at home or work and delicious enough to serve at a luncheon or shower. I’ve made this for parties, baby showers, wedding showers – all sorts of events and it’s always a hit. It’s one of my personal favorites so I make it often. If I want to lighten it up for a little more healthy lunch, I often substitute the sour cream and half of the mayonnaise with plain Greek yogurt.
Here are the ingredients that you will mix together in a large bowl:
4 cups diced cooked chicken – I like white breast meat but you can add dark too
3 hard-boiled eggs, chopped
1 1/2 cups seedless grapes, cut in half (green or red – both are great)
1 cup chopped celery
3/4 sliced green onions
1/2 cup toasted sliced almonds
Combine above and then mix the dressing ingredients in another bowl:
1/2 cup mayonnaise
1/4 cup plain Greek yogurt or sour cream
1 tablespoon honey mustard
1 teaspoon salt (I use Morton’s Season All-All Seasoned Salt)
1/2 teaspoon pepper
1/4 teaspoon onion powder
1/4 teaspoon celery salt
1/8 teaspoon dry mustard
1/8 teaspoon paprika
Pour the dressing mixture over the chicken mixture and toss gently. You can slice kiwi fruit and place on top if you like.
